For a different dish using leftover roast beef, why not try a one pot
meal? This is one of the most versatile recipes for leftovers you will
find. That is because there isn’t a rigid list of ingredients to follow.
This is just a guide and you can change it around all you want.
Ingredients:
Leftover roast beef, shredded or pulled apart
1 can of Ranch-style beans
1 can of Pinto Beans
1 can of Beef Broth
1 can of Diced Tomatoes
1 Medium Onion, chopped
1 tsp of Pinto Bean Seasoning
Procedure:
Put everything into your crock pot and stir, mixing well. Cook this
one on low heat all day. Other ingredients that you can mix and match
for this dish are leftover ground beef, shredded beef, chicken, pork,
chicken, or ham. Throw in any vegetables you happen to like such as
beans, peas, corn, or carrots. You can use as many of these as you want.
Try adding a can of tomatoes or tomato juice. Play around with your
seasonings, too. You may be shocked to see what sort of masterpiece you
can create. Serve either alone in a bowl, or over hamburger buns. It
also tastes great when topped with grated cheese.
You probably get the idea now just how versatile leftovers can be
when you own a crock pot. Just imagine the money you will save and how
much your family will appreciate you not serving the same old boring
meals night after night. Leftover cooking doesn’t have to mean giving up
good tasting food. It simply gives you a way to stretch the better ones
out a bit more.
